I hope you all had a great Christmas day, and if you didn´t well, be glad it was only one day.
Today I´m gonna share with you a really cool recipe to make sugar-free, delicious cookies. I saw this recipe on this cool Blog: https://everydaysimplehealth.wordpress.com/2014/12/24/apple-cookies/ although I made a couple of changes here and there.
I´ve been having these for breakfast this past few days and they are working it.
Lets get to it.
– 1 1/2 cups oat flour
– 2 tbsp ground flaxseed
– 1/2 tsp ground cinnamon
– dash of nutmeg
– dash of salt
– One grated apple
– 3 tbsp date paste (soaked dates on water or any kind of milk you like – I used soy milk and water for this one – and blended) I suggest you use more date paste if you want your cookies to be nice and sweet, maybe 6 or 7 tbsp date paste. Mine were not as sweet but I like them like that.
– 2 tbsp coconut oil
Mix wet and dry ingredients until consistency is doughy. Preheat oven at 170ºC – 338ºF. Take spoonfulls of mixture and form the cookies with your hands and place them on a baking paper lined tray. Sprinke some more ground cinnamon on top. Put them into the oven for 30 minutes or until they are slightly brown and crisp.
There you go, a super easy and healthy way to snack on this Holidays, or what´s left of them.
