So, what´s for lunch today?
I decided to go for a good ol´ Chicken n´ Veggies recipe. Easy, healthy, fast and delish. What else do you want?
Here´s what you´ll need:
-One chicken breast cut in small cubes
-Salt and pepper to taste
Drizzle you pan, or in my case, wok with olive oil over medium heat. Sauté the onion and remove.
Season and add the chicken and cook until it´s golden and crisp and remove. Add the cauliflower and broccoli and cook for 5 minutes. Add the carrots, chayote and mushrooms and cook for another 5 minutes. Then add the onion and chicken and let the flavors incorporate for another 5 minutes over low heat.
Let it rest for a couple of minutes, serve and munch on!
